For a morning taste of Telluride choose the Wilderness Breakfast Bowl, a delightful mix of farro, sunny side up eggs, wild mushrooms, organic spinach, kale, tomato confit, basil pesto, and reggiano. Add sides like house made sausage, tenderbelly bacon, organic eggs, or cast-iron roasted marble potatoes.
Come back for a fill-me-up between adventures. Quickly recharge with a salad of winter montrose greens, roasted local winter squash, or Black Iron’s Cobb salad. Enjoy a mountaineer’s BLT, crispy pickle brined heritage pork sandwich, a Wagyu half-pound burger, or a house smoked organic sockeye salmon sandwich. Make their staple menu choices a staple of your day and choose fried Texas quail legs, beef cheek tacos or granja fresca tacos, cast iron soup, baked rub red smoked trout dip – available only for lunch, or their special Rocky Mountain Elk Chili. Choose something to really fill you up like buttermilk half chicken, Colorado potato dumplings, or grilled San Luis Valley Colorado rainbow trout. Cap the meal with a sweet treat like apple galette served with caramel sauce and vanilla bean ice cream or chocolate winter custard – a delightful mix of orange liqueur whipped cream, seasonal winter berries, and mint.
If you didn’t try one of the salads for lunch, you’ll be able to try one for dinner. Many of the lunch staples are also available for dinner, but if you missed the baked ruby red smoked trout dip, you’ll have to come back another day. Instead, you can try the rustic potato dumplings served with burgundy black truffles, toasted caraway brown butter, reggiano, and white asparagus. Enjoy an evening meal of braised Colorado lamb shank, whiskey glazed Berkshire pork porterhouse, or roasted labelle duck breast. You’ll love the eight-ounce Wagyu burger, or the mouth-watering Rocky Mountain elk chop or seared wild sockeye salmon. If you’re looking to share, choose the 20 oz. Rocky Mountain elk loin, 16 oz. prime aged New York Strip loin, 32 oz. Wagyu dry aged bone-in ribeye. If red meat isn’t on your group’s menu, choose the 16 oz. wild sockeye salmon filet or the 32 oz. free range stuffed chicken. Bring an end to the meal and the evening with apple galette or chocolate winter custard.
